Pears moisten the Lungs and nourish Yin. They are great for soothing a dry throat or cough, and helping sluggish digestion.
Beurre bosc pears will keep their shape well. If your pears are very ripe, stew them instead.

INGREDIENTS
4 firm pears
1 L water
¾ cup sugar or ¼ cup honey
1 cinnamon stick
10 cardamom pods
1 star anise
½ vanilla bean
3 strips orange peel
METHOD:
Peel the pears, then halve and core them, or leave them whole.
Place water, sugar (or honey), spices, and orange peel in a medium saucepan, and bring to a simmer.
Add the pears, making sure they are immersed in the liquid, and simmer with lid on for 2 hours or until tender.
Remove from heat, allow to cool and enjoy – serve alone, with vanilla yoghurt, or add to porridge.

The pears can be stored in the fridge in their poaching liquid for up to 1 week. If using straight away, the poaching liquid can be boiled down into a syrup to pour over them (hello, dessert).
